Yes, there is kale in this smoothie. Let’s just get that out of the way. But the frozen kale is virtually undetectable. Instead, all you taste is a a dreamy blend of cherries, vanilla, coconut water and almond butter. This is one of my favorite “dinner” smoothies or a great pick me up after a good workout. Even better, if you happen to be a grower of kale like me, this is a tasty way to use a bumper crop of kale up.
I adapted this smoothie from Julie Morris’s Superfood Smoothies, with a couple of key changes.
Ingredients:
- 2 cups frozen cherries
- 1-2 cups packed frozen kale (adjust to taste)
- 2 Tbsp almond butter
- 2 cups coconut water
- 1/2 tsp wheatgrass powder
- 2 Tbsp collagen hydrolysate
- 2 Tbsp vanilla extract
- Drizzle of honey to taste
Directions:
Toss everything in the blender – being careful that the almond butter is towards the center (it can stick to the walls). Blend thoroughly. Pour into a pre-chilled glass and enjoy!
Makes 2 16-Ounce servings. One for you, and one for a friend…if you can keep yourself from not drinking it all!
